Kinayod na Niyog

"Buko" is the not-fully ripened coconut or young coconut. The husk is green in color and the coconut water or juice inside would be refreshingly sweet. The meat will be very tender, almost jelly like and very delicious. 

"Niyog" is called a mature coconut. The husk will be brown in color and the juice is somewhat bland. The meat will be very hard to scrape off the shell. This grater is specially used to scrape the mature meat off the shell (http://www.buyasianfood.com.au/index.aspx?KW=nf0042).

After grating the meat, using a cheesecloth or bare hands, squeeze the grated coconut and the milk will be drawn.
